Black Bean Feta Omelette
Serves 4 | Gluten-free
Ingredients
- 400g black beans (drained)
- Juice of 1 lime
- 1/4 tsp Cumin
- Chilli sauce
- 8 free-range Eggs
- 2 Avocados (sliced)
Salsa Ingredients
- 2 Tomato’s, (diced)
- 1 Onion, diced
- Juice of ½ lime
- Handful of Coriander, (chopped)
Combine all the salsa ingredients in a bowl. Season with salt and pepper. Set aside.
Pulse black beans, lime juice, cumin, and chilli sauce in a food processor until smooth.
Heat ½ tsp olive oil in a small, pan over medium heat. Beat two eggs with salt and pepper. Pour into the pan. Lift the cooked egg to let raw egg flow underneath.
When set, transfer the omelette to a plate. Add a quarter of the black bean mixture and 2 tablespoons of feta to the center of the omelette. Fold the edges over the center. Top with salsa and avocado slices.
Repeat to make four omelettes.
