BBQ Peach and Feta Salad

Walnuts: Rich in omega-3 fatty acids and antioxidants, which are known to enhance brain function and may help prevent cognitive decline.

 

Peaches: High in vitamins A and C, which are vital for skin health. They help regenerate skin tissue and fight oxidative damage.

Ingredients

  • 4 Peaches (Halved and pitted)
  • 1 tbsp Avocado Oil
  • 1 cup Feta Cheese (Crumbled)
  • 2 cups Mixed Greens
  • 1/4 cup Basil Leaves (Torn)
  • 2 tbsp Balsamic Glaze
  • 1/4 cup Walnuts (Chopped)

Directions

  1. Preheat BBQ to medium-high heat. Brush peach halves with avocado oil. Place peaches cut side down on the BBQ and cook until charred and soft, about 4-5 minutes.
  2. Place the mixed greens onto a platter, then arrange the peaches, crumbled feta and basil leaves on the top.
  3. Drizzle with balsamic glaze and a bit of olive oil (if needed). Sprinkle with the chopped walnuts, and season with salt and pepper. Serve while peaches are warm with your chosen protein.
